Cola Bundt Cake

What is it about the dark elixir of Cola that we all love? At this time of the year we all start to get giddy about the Coca Cola lorry and the tune ‘Holidays Are Coming!’ makes us smile when it plays on the TV adverts. So the perfect time to make a Cola Cake with a festive look.

I made this in my new Nordic Ware piñata bundt tin.

The metal section on top creates a hole in your cake. To make a round piñata cake you need to bake two cakes using this recipe.

Cola Bundt

225g unsalted butter

250g caster sugar

100g light brown muscovado sugar

2 large eggs

240g plain flour (All Purpose flour)

40g cocoa

1 teaspoon salt

1.5 teaspoons baking powder

225g cola

120g sour cream

1 teaspoon vanilla essence

Cola Bottle Sweets

Pre heat the oven to 170 degrees.

Oil and flour a bundt tin. This recipe is for a 10 or 12 cup bundt pan.

Cream the butter and sugar.

Add the eggs one at a time.

Add one third of the dry ingredients and mix well.

Add the sour cream to the batter.

Add one third of the dry ingredients.

Add the cola and mix gently.

Add the remainder of the dry ingredients.

Pour into the prepared tin and bake for around 60 minutes.

Leave in the tin to cool so that the piñata cake keeps its shape.
I used fondant icing and icing writing pens to make my cake into a Christmas Pudding. Cola bottles and sugared sour cola bottles are hidden inside.

I don’t mind sharing the bundt love but if you use this recipe please credit my HumbugsHouse blog because coming up with recipes isn’t always straightforward!
