Apple and Marzipan Puff Pastry Heaven

Me and the Curly One saw a James Martin programme the other Saturday after his regular slot on ‘Saturday Kitchen.’

It was giving quick and easy food ideas to wow your friends and family.

This idea made us both drool… I had marzipan in my baking cupboard and had just put lots of stewed apples in the freezer from the allotment.

Very easy and mighty tasty.

Two sheets of ready rolled puff pastry, I found these in my Sainsburys Local store for £1 each.

Stewed apples, jar or home made

Egg, whisked for egg wash

Icing sugar to dust

Creme fraiche to serve (or ice cream, single cream, double cream)

Pre heat oven to 200 degrees

Grease your baking tray

Place one sheet of ready rolled puff pastry on your baking tray

Slice marzipan and lay on top of the pastry. Leave a 2cm gap around the four edges.

Lay stewed apples on top of the marzipan. The apples we had don’t stew down, they stay as chunks so either way will work.

Egg wash around the edge of the four sides.

Get the second piece of puff pastry and cut lines into it so the top isn’t solid and the apple will show through.

Push the pastry together around the sides to seal with the egg wash.

Egg wash the top of the pastry.

Put in the oven for 25 minutes.

Serve with a sprinkle of icing sugar and a dollop of creme fraiche.
Oh my… Blooming lush. Would be nice with some dried cranberries in, maybe sweet mincemeat instead of the apples at Christmas.
