Shopping Made Easy

Today we went shopping at a new location… there were no queues, it was all fresh produce, we picked what we wanted and didn’t have to pay… where were we? Down on 5B of course!

This is what ‘Allotmenteering’ is all about.

Our first ever homegrown potatoes!

Tonight’s tea was delicious.

Salmon Fishcakes With Home Grown New Potatoes And Green Salad

Peel three small sweet potatoes and chop into small pieces and bring to the boil in a pan of salted water.

Squeeze the juice of half a lime onto two salmon pieces, cover and cook in the microwave for two minutes. Put to one side.

Finely chop six spring onions, piece of root ginger, two cloves of garlic, one green chilli and a small sprig of coriander.

Drain and mash the sweet potatoes, flake the salmon into the mash, mix together along with the chopped ingredients, salt and freshly ground black pepper.

Add a drizzle of rapeseed oil to a large frying pan and turn the heat on.

Shape the mix into fish cakes and pat gently with plain flour.  Place into the heated oil, turn after five minutes. Cook for five minutes on both sides.

We served with fresh new potatoes, which we boiled then added butter, salt and pepper served with a green salad made using baby kale leaves, tree spinach and lettuce with broad beans and a drizzle of lime juice.
