‘Would you like my last Rolo?’ Bundt Cake

So what to make for a ‘I LOVE…’ themed Clandestine Cake Club on Valentines Weekend.

Rolos and my quilted heart shaped bundt tin came to mind!

250g softened unsalted butter

100g dark brown muscovado sugar

330g caster sugar

3 large eggs

225g plain flour (all purpose)

90g cocoa powder

1 teaspoon salt

1.5 teaspoons bicarbonate of soda

240ml buttermilk

135ml sour cream

mini rolos – or chop large rolos into quarters

1 tablespoon vanilla extract

Large rolos for decorating the cake


Preheat oven to 170 degrees

Grease and flour your bundt tin

Cream the butter and sugar together

Add the eggs one at a time and beat until fluffy

Add one third of the dry ingredients, then the sour cream, then one third of the dry ingredients, then the buttermilk followed by the last of the dry ingredients.

Place one half of the batter in the tin, place the small rolos over the mixture, put the remainder of the batter on the top.

Bake for one hour then cool on a wire rack.

For the covering I melted two packs of full size rolos with two tablespoons of butter.

I then put rolos around the edge of the cake.
