Pirates of the Caribbean Bundt

This is a Mango and Passionfruit Cream Bundt

We had a pirate theme for one of our Clandestine Cake Club events in June 2013

The ingredients…

Filling

200g full fat Philadelphia cream cheese

1/4 cup butter

1/2 cup granulated sugar

1 large egg

2 tbs of plain flour

1 tsp vanilla extract

Cake

337g butter

675g golden caster sugar

6 eggs

525g plain flour

3/4 tsp bicarbonate of soda

3/4 tsp salt

525g thick mango and passionfruit yoghurt (Sainsburys)

2 tsp vanilla extract

One tin of mango slices

Juice and seeds of one passionfruit

 Decoration

Icing sugar mixed with the juice of one passionfruit to make a glace icing

Homemade passionfruit curd

Once again I’m using Rachel McGrath’s Springtime Strawberry Bundt recipe as the base of my cake.

Method

Grease and flour your bundt pan

Whip up the cream filling ingredients in a bowl and put to one side

Cream the sugar and butter

Add the eggs one at a time

Add one third of the dry ingredients

Add one half of the yoghurt

Alternate flour and yoghurt mixing until combined

Add the mango and passionfruit in to the mixture and stir gently

Layer cake batter into the bundt pan until half full

Layer the cream filling on top of the batter

Cover with the remaining batter

Bake for 1 hour and 10 minutes in a preheated oven at 170

Leave to cool in the tin
