Pork and Apricots

This is a meal that my parents have been making for over 20 years.  Despite the fact that my dad doesn’t like anything that doesn’t include chips, he actually loves this and is the only meal he can cook from scratch as long as my mum gets all the ingredients ready for him.

I think one of my lovely Auntie’s originally got this meal from a M&S recipe card.


1 lb pork fillet cut into bite size pieces

2 tbs seasoned flour, in a medium sized freezer bag

butter or oil to fry

14 0z can of apricot halves, drained with the juice retained

2 tbs Worcestershire sauce

2 tbs demerara sugar (I have used light brown muscovado instead)

2 tsp vinegar

2 tsp lemon juice

8 tbs water

8 tbs apricot juice, as above


Toss the pork pieces in the seasoned flour.

Heat butter/oil in pan, add pork and gently brown.

In a jug measure the water, apricot juice, Worcestershire sauce, vinegar, lemon juice and sugar and add to the pork. Add any remaining flour.  Bring to the boil then simmer for 15 minutes with the lid on. Add the apricots and cook for another couple of minutes.

Serve with rice.
